Carnaroli rice is a superfine rice with a large grain and represents the best of Italian rice production so as to earn the nickname of "king of rice"; among the qualities that the Riseria Re Carlo offers, it is certainly the one that remains more "al dente": thanks to its remarkable characteristics, it is in fact considered the best rice for preparing risottos and the one most used in signature cuisine.
